A patient once told me the secret to great Yorkies is to whip them until the batter is fluffy as hell! Thankfully my mixer was present to do such a daunting task. I put it on speed 10 for about 4-5 minutes. Look how high they rose!!!

New Years Eve Dinner
On a whim, I decided to have the traditional Canadian meal: Roast Beef, Mashed Potatoes, Yorkshire Pudding & Baby Carrots. I must say, my yorkshire pudding was "sky high", soft, moist, and absolutely the best I've had. Times a ticking, 2008 is near! Cheers everyone!
